Berbagai Resipi Ketam


My family was obviously peminat ketam tegar. Setakat 4-5 kilo kitaorg sekali makan satu family boleh habis. Tak ada nasi pun xper. So today i juast want to share my favourite recipe of crabs.

KETAM PERCIK

Bahan-bahan:
ketam-5 ekor
minyak
serai-1 batang (ketuk)
gula-2 sudu
garam-secukup rasa
serbuk perasa-sikit jer
santan-150 ml (sukat pakai botol susu anak jer)
Air-300 ml

bahan kisar:
cili kering
bawang kecil-5 ulas
bawang besar-1 labu
bawang putih-2 ulas
halia-1 inci

Cara Membuatnya:
1. Panaskan minyak
2. Tumiskan bahan kisar sampai naik bau dan pecah minyak;
3. Masukkan gula,garam,serbuk perasa. Kacau sebati;
4. Masukkan serai dan air.Kacau dan biar sampai mendidih;
5. Masukkan ketam,gaul rata.
6. Masukkan santan.Kacau sampai bersalut dengan ketam.Biarkan dalam 20 minit.
7. Angkat dan hidangkan bersama nasi panas.


Ketam masak lemak cili api
Bahan-bahan ( untuk makan 1-2 org )
  • 1 ekor ketam sederhana besar
  • 1 setengah cawan santan pekat
  • 10-15 biji cili api
  • Kunyit sebesar ibu jari
  • 1 cm halia
  • 2 batang serai dititik
  • 2 keping asam keping
  • 4 putik jagung muda (kalau suka)
  • Daun kunyit (kalau suka untuk mewangikan)
Cara-cara
  1. Kunyit, cili api dan halia ditumbuk lumat.
  2. Masukkan santan, serai, asam keping dan bahan yg ditumbuk lumat ke dalam periuk.
  3. Panaskan sambil dikacau sehingga santan mendidih. Ini bagi mengelakkan santan berkepala.
  4. Masukkan ketam dan jagung muda. Biarkan seketika.
  5. Perasakan dengan garam dan serbuk perasa. Akhir sekali masukkan daun kunyit. Siap....

Ketam masak sos bawang putih












Bahan-bahan ( Untuk 3 Orang )
  • ketam 6ekor
  • bawang besar 2 biji
  • cabai besar 2batang
  • telur 2biji
  • sos bawang putih sebotol
  • daun limau purut
  • serai 2batang
  • garam (secukup rasa)
  • gula(secukup rasa)
  • santan kelapa
Cara-cara
  1. Rebus ketam sehingga keluar airnya.
  2. Kemudian asingkan ketam dan ambil air ketam yang telah direbus tadi.
  3. Masak air tersebut kedalam periuk, dan masukkan santan,sos bawang putih, bawang besar yang telah dihiris bulat,serai,daun lumau purut,(tunggu sehingga agak mendidih).
  4. Kemudian masukkan ketam kedalam periuk yang telah mendidih tadi, masukkan garam, gula secukup rasa(biarkan selama 2 minit).
  5. Masukkan telur ayam dan biarkan selama 10saat dan kacau.

Ketam Bercili


Bahan-bahan ( 4 orang )
  • 5-6 ekor Ketam Batu (Sri Lankan Crab)
  • 8 ulas Bawang Putih - dikisar
  • 15-20 Cili Kering - dikisar
  • 1/2 botol Sos Cili (size kecil)
  • 1/2 botol Sos Tomato (size kecil)
  • 2 sth Cuka (optional)
  • Garam & Gula (secukup rasa)
  • 2 biji Telur (dikocok)
Cara-cara
  1. Rebus/kukus ketam hingga kulitnya bertukar warna (kemerah2an)
  2. Selepas itu, kopek kulitnya & bersihkan. Sepit ketam pula harus diketuk supaya mudah dimakan isinya.
  3. Tumis bawang putih yg tlh dikisar hingga naik bau. Baru masukkan cili kering dan tumis hingga garing.
  4. Kemudian masukkan pula sos cili & sos tomato. Gaul rata.
  5. Bila sudah agak garing, masukkan pula cuka, garam & gula. Masukkan 1/2 cawan air bersama ketam yg tlh dibersihkan tadi. Gaul rata.
  6. Tuangkan telur yg tlh dikocok. Biarkan 10saat. Baru balik2an ketam.
  7. Sajikan ketam dgn sedikit hirisan daun ketumbar.

Ketam Lada Hitam

Bahan-bahan ( 4-5 orang makan )
  • 1kg ketam nipah (Lebih kurang 4-5 ekor)
  • 5 ulas bawang putih (saya suka letak byk)
  • 1 sudu besar lada hitam (bagi suka pedas leh letak lebih)
  • sos tiram,sedikit kicap pekat
  • minyak untuk menumis
  • daun ketumbar (ikut suka)
  • garam dan gula sesedap rasa
  • 1/2cawan air (optional)
Cara-cara
  1. ketam dicelur dengan air panas sebentar. Dah bertukar warna leh bersihkan dan dibelah 2.
  2. Panaskan minyak dalam kuali kemudian tumis bawang putih
  3. Dah naik bau masukkan lada hitam, kicap pekat dan sos tiram. Tumis seketika kemudian masukkan air
  4. Masukkan ketam, garam dan gula. Gaul sebati dan tutup kuali lebih kurang 10 minit.
  5. Dah masak leh taburkan daun ketumbar dan sedia di hidang.

Ketam Bollywood

Bahan-bahan ( 2-3 org )
  • 4 ekor ketam sederhana besar
  • 4 biji bawang merah- dikisar
  • 3 biji bawang putih - dikisar
  • 2 biji bawang besar - dikisar
  • 2 sudu cili kering (klu nak pedas ble lebihkan lg)
  • 3 sudu rempah kari
  • 1 sudu teh serbuk ketumbar
  • 1 sudu teh serbuk jintan manis
  • 1 sudu teh serbuk jintan putih
  • 2 sudu sos tiram
  • 2 sudu kicap cair
  • 2 tangkai daun kari
  • 1 batang serai
  • Air asam jawa
  • Garam
  • Gula
  • Daun ketumbar - utk hiasan
Cara-cara
  1. Panaskan minyak dan masukkan daun kari. Biar hingga layu kemudian masukkan bahan-bahan kisar dan tumis hingga wangi.
  2. Masukkan semua rempah-rempah dan tumis hingga garing dan naik minyak.
  3. Masukkan sos tiram, kicap cair, serai, air asam jawa, garam dan gula.
  4. Last sekali masukkan ketam dan kacau rata. Jika kurang rasa bolehlah diejas supaya ada rasa rempah, manis, masin dan masam.
  5. Tabur dengan daun ketumbar untuk bau lebih wangi dan hidangkan nyummm..nyummm.. 


Sup Ketam
Bahan-bahan ( 2~3 orang )
  • BAHAN A
  • 3 ulas bawang merah dimayang
  • 2 ulas bawang putih dimayang
  • 1 inch halia diketuk
  • 1 batang kulit kayu manis
  • 2 kuntum bunga lawang
  • 3 biji buah pelaga
  • 5 biji cengkih (optional)
  • 2 ekor ketam (dibersih dan dipotong 2)
  • 2 biji kentang dipotong ikut suka
  • 1/2 batang lobak merah dipotong memanjang (optional)
  • 2 batang daun saderi (optional)
  • 1 bungkus sup bunjut
  • 1 sb serbuk lada putih
  • 4 cawan air
  • garam/gula secukup rasa
  • daun bawang/sup
Cara-cara
  1. Tumis bahan A hingga wangi.Masukkan air, sup bunjut dan kentang.Masak hingga mendidih dan kentang empuk.
  2. Masukkan lobak merah, daun saderi dan ketam.Perasakan dengan lada putih, secubit garam dan gula.
  3. Kacau seketika atau hingga ketam masak.Tutup api.Masukkan daun sup dan bawang yang dipotong
  4. Sedia dihidang bersama nasi putih.
Ketam masak merah

Bahan-bahan ( 4 org )
  • 4 ekor ketam
  • 6 ulas bawang merah
  • 3 ulas bawang putih
  • 10 tangkai cili kering
  • 4-5 helai daun limau purut
  • 3 batang serai diketuk
  • 1 cawan air
  • garam dan gula secukup rasa
  • minyak untuk menumis
Cara-cara
  1. Kisar bawang dan cili kering. Boleh masukkan 1 camb minyak masak untuk lumatkan cili kering.
  2. Tumis bahan yang dikisar sehingga betul2 garing.
  3. Masukkan air, daun limau purut, serai, gula dan garam serta ketam. Masak sehingga pekat.
  4. Sedia dihidang.

Ketam Masak Lemak Nenas

Bahan-bahan ( Satu famili )
  • 1 kg Ketam (apa2 jenis pun bole)
  • 2 biji bawang besar
  • 5 ulas bawang putih
  • 1/2 inc halia
  • 10 helai lada kering
  • 1/2 inc kunyit hidup
  • 1 sudu besar serbuk kari
  • 1 kotak santan (200ml)
  • 1 biji nenas masak
  • 1 batang serai diketuk
  • Sedikit minyak utk menumis
  • Garam dan perasa (ajinomoto or serbuk ayam)
Cara-cara
1. Ketam dibersihkan.
2. Bawang besar, bawang putih, halia, lada kering, kunyit hidup dikisar.
3. Tumis bahan kisar, masukkan serai n kari, masukkan ketam dan sedikit air. Masak seketika hingga ketam berubah warna.
4. Masukkan nenas, santan, garam dan perasa. Sentiasa kacau tuk mengelakkan pecah santan. Siap n hidang. 


Sup Isi Ketam

Bahan-bahan ( Seisi keluarga )
  • 2 liter air (agak-agak je)
  • 1 bungkus 'crab stick' (potong ikut suka)
  • 1 biji telor (kalau nak cantik ambil putihnya je)
  • 1/2 tin jagung manis (sweet corn)
  • Sedikit tepung jagung (dibancuh)
  • Sedikit tepung kanji (dibancuh)
  • 2 sudu besar sos tiram
  • Garam dan gula secukup rasa
  • Serbuk perasa (optional)
Cara-cara
  1. Renihkan air, masukkan 'crab stick' dan jagung biarkan hingga mendidih. Masukkan sos tiram, garam, gula dan perasa. Pukul telur dan tuang perlahan-lahan sambil kacau (biarkan telur bertali). Tuang bancuhan tepung jagung dan tepung kanji perlahan-lahan sambil terus kacau sehingga pekat (lagi pekat lagi bagus). Kalau tak cukup pekat tambah lagi tepung jagung. Biarkan seketika hingga menggelegak sebelum sedia untuk dihidang. Selamat mencuba!!!

Kari Ketam Tumis Darat
Bahan-bahan ( 3-4 orang)
  • 3-4 ekor ketam dibelah dua
  • 1 peket kecil rempah kari ketam
  • sedikit air(3 cawan)
  • sedikit buah nanas
  • 1 peket santan segera
  • garam secukup rasa
  • *3 ulas bawang kecil dan seulas bawang putih di mayang dan digoreng-asingkan utk masuk ke dlm kari akhir sekali.
Cara-cara
  1. masukkan 3 cawan air kedalam periuk.
  2. masukkan ketam yang telah dibelah tadi
  3. masukkan rempah kari ketam.biarkan hingga didih.
  4. kemudian masukkan santan.
  5. setelah itu masukkan beberapa potong buah nanas
  6. masukkan garam secukup rasa. setelah kari mendidih dan masak,tutup api dan masukkan bawang yang telah ditumis asing tadi.
Ketam Briyani
Bahan-bahan ( 2-3 orang makan )
  • 2 ekor Ketam Bunga (sederhana besar)
  • (Bahan kisar)
  • 5 ulas Bawang Merah
  • 4 ulas Bawang Putih
  • 1 inchi Halia
  • 1 inchi kulit kayu manis, sekuntun bunga lawang dan 2 biji buah pelaga
  • 1/2 cwn minyak masak/ minyak sapi
  • 1/4 cwn susu cair
  • (Dicampur dgn bahan kisar)
  • 2 sd bsr rempah briyani
  • 1 sd bsr rempah kurma
  • garam dan gula secukup rasa
  • 3 cwn air
  • Cili merah (hiasan)
Cara-cara
  1. 1. Bersihkan ketam dan cuci sehingga bersih.
  2. Panaskan minyak dan tumis kulit kayu manis, bunga lawang dan buah pelaga.
  3. Masukkan bahan kisar bawang merah, bawang putih dan halia yang dicampur rempah briyani dan kurma
  4. Setelah rempah garing, masukkan air dan tunggu sehingga mendidih dan masukkan ketam
  5. Masukkan pula susu cair, kacau rata dan rasakan dgn garam dan gula.
  6. Setelah masak boleh diangkat dan dihias dgn cili merah
Ketam Masak Pindang

Bahan-bahan ( 2 orang makan )
  • 1 ekor ketam bersaiz besar - dibersihkan
  • 2 ulas bawang merah - kupas kulitnya, basuh dan hiris nipis
  • 1 batang serai - diketuk
  • 1 helai daun kunyit
  • sedikit air
  • sedikit garam
Cara-cara
  1. Masukkan bawang, serai dan daun kunyit beserta air ke dalam periuk dan didihkan.
  2. Apabila sudah mendidih, masukkan ketam dan sedikit garam dan biarkan ia mendidih sekali lagi.
  3. Hidangkan. Sedap dimakan sewaktu panas.

Ketam kukus sos plum

Bahan-bahan ( 1 hidangan )
  • 1 kilo ketam bunga (dibersihkan dan dipotong ikut suka)
  • 1/2 labu bawang besar (dihiris dadu kecil)
  • 2 ulas bawang putih (dicincang)
  • 3 sudu makan taucu / taucu pedas (boleh tambah atau kurangkan)
  • 2-3 sudu makan sos cili
  • 1-2 sudu makan sos plum (jika tiada, boleh ganti dgn sos masam manis dsb)
  • kicap cair / kicap manis
  • minyak bijan secukupnya
  • sedikit hirisan cili benggala (dihiris dadu)
  • sedikit hirisan daun bawang
  • sedikit hirisan cili padi - jika suka
  • gula - jika perlu
Cara-cara
  1. Sediakan pengukus. Jerangkan airnya. Sediakan bekas tahan panas atau loyang. Susunkan ketam di dalamnya. Taburkan sedikit garam dan serbuk lada hitam. Ketepikan.
  2. Di dalam kuali, panaskan minyak bijan secukupnya. Tumis bawang besar dan bawang putih hingga terbit bau. Kemudian masukkan taucu dan sos plum. Tumis lagi
  3. Masukkan sos cili, kicap dan sedikit air. Kacau dan biarkan ia mendidih. Kemudian, masukkan gula (jika perlu), cili benggala dan cili padi. Jika ingin kuahnya pekat, bolehlah ditambah dgn bancuhan tepung jagung. Kacau hingga kelihatan pekat. Tutupkan api dan tuangkan ke atas ketam tadi.
  4. Kukuslah selama 7-10 minit atau sehingga masak.
5.    Setelah masak, angkat dan hiaskan dgn hirisan daun bawang. Hidangkan.

Ketam Tomyam Bercili

Bahan-bahan ( 3 org makan )
  • Ketam 5-6 ekor Serai 2 btg Lengkuas 1cm Cabai mesin 2 camca besaq Cube tomyam 1 Daun limau purut 2-3 helai Minyak n garam Sos tomato 3 camca besaq Bawang besaq @ bawang merah, bawang putih 2-3 ulas (mayang)
Cara-cara
  1. Gaul ketam dgn garam, goreng 1/2 msk dan toskan
  2. Panaskan minyak, tumis bawang, serai & lengkuas sampai naik bau Masukkan cabai mesin agak2 masak masukkan sos tomato, kiub tomyam & air (nak berkuah boh byk)
  3. Kacau rata, masukan ketam yg dah digoreng, tutup periuk biar sampai mendidih dan taburkan daun limau purut
Ketam bakar Berempah

Bahan-bahan ( 2 org )
  • 3 ekor ketam sederhana besar - dibersihkn
  • 1/2 labu bwg besar *
  • 5 ulas bwg putih *
  • 1/2 sdu kecil lada hitam *
  • 1 sdu kecil jintan manis *
  • 1 sdu besar jintan putih *
  • 1 sdu besar lada blend *
  • 1 inci halia *
  • 2 btg serai - dipotong2 *
  • 1/2 sdu besar rempah kari *
  • garam & aji
  • aluminium foil
  • daun kunyit / daun limau purut / daun kari - nk letak sume daun pon bleh
Cara-cara
  1. blend kan bhn2 yg bertanda *. masukkn cket air. jgn masuk byk memadai boleh blend saja.
  2. blend sume bhn hingga hancur. kemudian masukkn dlm mangkuk.
  3. ambil ketam. nk senang potong2 cket. xnk potong pon xper. masukkn dlm mangkuk yg berisi rempah td. masukkn garam & aji. gaulkn rata .
  4. kemudian perap hingga 1/2 jam @ lebih pon xper.
  5. bila nk bakar bentangkn sekeping aluminium foil atas tray oven. kemudian letakkn ketam td beserta rempahnyer skali....jgn masukkn air yer....
  6. pastu letakn daun kari @ daun yg anda suke atas ketam tu & lipat mcm kiter lipat nasi lemak
7.    letak tray paling atas dgn suhu 180'c selama 30 - 40 minit.. 
Ketam Masam manis

Bahan-bahan ( 3-4 orang )
  • 3-4 ekor ketam
  • 3 ulas bawang putih,dicincang
  • 1 labu bawang besar,dihiris
  • 3 sudu besar sos cili
  • 5 sudu besar sos tomato
  • 2 biji tomato,dipotong baji
  • 2 helai daun bawang,potong pepanjang
  • semangkuk kecil nenas,dipotong chunky2
  • 3/4 cawan air,atau secukupnya
  • garam & gula secukup rasa
  • 1 biji telur
Cara-cara
  1. Siang,basuh dan toskan ketam
  2. Panaskan minyak dalam kuali dan tumis bawang besar dan bawang putih hingga naik bau
  3. Masukkan sos cili dan sos tomato dan kacau.Tambah garam dan gula secukup rasa,kemudian masukkan air
  4. Masukkan ketam,gaul rata dan biarkan mendidih
  5. MAsukkan tomato dan nenas dan kacau sebati.
  6. Pukul telur dalam mangkuk dan masukkan dalam kuali dan kacau. Biarkan mendidih seketika,dan kuah kelihatan pekat sikit.
  7. Akhir sekali,masukkan daun bawang,kacau dan tutup api. Daun bawang boleh diganti dengan daun ketumbar jika tiada stok.
  8. Hidangkan dengan nasik putih.
Ketam Bistik Hitam
Bahan-bahan ( 2-3 Orang )
  • 1 Biji Telur Size A (Untuk Isi)
  • 2 Biji Telur Size A (Untuk Bungkus)
  • Bawang Besar (Hiris Halus)
  • Cili Padi (Hiris Halus)
  • Carrot (Hiris Halus)
  • Kacang Panjang (Hiris Halus)
  • Secubit Garam
  • Secubit Lada Putih
  • 4-5 Keping Isi Ketam Dihiris Halus - (Boleh beli di tesco yg packet tu)
Cara-cara
  1. ISI : Gaul 1 Biji Telur dengan SEMUA bahan yang dihiris halus , Isi ketam , Garam dan Lada.
  2. BUNGKUS : Pecahkan 2 Biji Telur ( Lebih Sedap kalau lebar dan nipis)
  3. Bila BUNGKUS dah separuh masak, masukkan ISI.
  4. Kemudian Lipat Semua Bahagian Tepi BUNGKUS tadi hingga tutup ISI.
  5. Balikkan BUNGKUS tersebut dengan cermat
  6. dan.....SIAP

Ketam goreng Berkeju
Bahan-bahan ( 3-5 org )
  • 3 ekor ketam (belah 2/4)
  • 1 biji bawang besar holland (potg bulat)
  • 1/2 biji lada benggala hijau/merah (dadu)
  • 3 kpg daun limau purut (dihiris)
  • 100g cheddar cheese + mozarella (nak guna keju keping2 pun boleh..gune 4-6 kpg)
  • butter utk menumis
  • 1 kiub pati ayam, sedikit gula dan susu cair (susu cair mengelakkan keju terlalu keras)
  • lobak merah dan timun sbg hiasan
Cara-cara
  1. lumurkan ketam dengan sedikit kunyit dan goreng sehingga garing
  2. panaskan kuali, masukkan butter dan tumis bawang beserta lada bengala.
  3. masukkan keju da sedikit air. tutup kuali. kacau sekali sekala sehingga keju cair, masukkan sedikit susu cair.
  4. tambahkan kiub pati ayam beserta daun limau purut dan sedikit gula. tidak perlu garam kerana keju dan kiub telah mempunyai rasa masin.
  5. tuangkan kuah ke atas ketam. hias dgn timun dan karot.
  6. selamat mencuba..
